Meet Simone Rossi

Simone Rossi is an award-winning hospitality professional and founder of Rossi Studio. A former director of bars at Rosewood Hong Kong, he brings more than a decade of experience across London, Hong Kong, and independent brand creation.

Originally from Grosseto, Italy, Simone built his career across London and Hong Kong before founding Rossi Studio. His background spans bar leadership, drinks development, guest experience, and internationally recognized hospitality work, shaped by both operational depth and creative direction.

His path includes Veranda, Quo Vadis, Aqua Spirit, Aqua Restaurant Group, and the opening team of DarkSide at Rosewood Hong Kong. Along the way, he earned the Disaronno Mixing Star title in 2015, became World Class Country Winner for Hong Kong and Macau in 2018, founded Ratafia Rossi in 2023, and launched Rossi Studio in 2024.

His approach combines creativity, operational clarity, and a strong understanding of what makes hospitality memorable.
